October 22nd is Nut Day. Apparently is was started by the Liberation Food Company, a fair trade company, that wanted to celebrate the long and storied history of the nut, to advocate fair trade nuts & promote healthy living.
I’ve always enjoyed eating nuts but use nuts even more since we’ve been mostly dairy free. The creaminess of nuts can be used to make nut based milks, cream and other dairy free substitutes. Nuts are also a staple ingredients in many grain-free breads & cakes.
However I still enjoy eating a handful of raw or activated nuts. My favourite nuts would be Macadamia Nuts followed closely by Brazil Nuts. I have memories of collecting macadamia nuts from the tree down the road when we lived at Buderim. We would then find a crack or hole in the concrete around the house to place the nuts in so we could crack them open by hitting them with a hammer.
There’s usually some sort of almond milk in my fridge. Sometimes I’ll make my own, generally using this Almond & Sunflower Seed Milk recipe. If you want to make your own milk and are looking for a nut milk bag, I’d recommend this one.
My children like making Chocolate Banana Nut Icecream which uses macadamia nuts, with the creaminess coming from frozen bananas.
My sons favourite dairy free custard would be this cashew custard.
This dairy free sour cream uses pine nuts and was one of the first things I made in my Bellini Intelli Kitchen Master (my thermo machine).
One of my favourite grain free breads is this Grain Free Sultana Spice Bread which uses almonds and pecans.
During winter I made this Creamy Chicken & Brown Rice Soup for the first time (after hearing about it for a while). The ground almonds & rice helped make the creaminess of the soup.
Another meal that uses nuts that I make is Creamy Salsa Chicken. As my daughter doesn’t like coconut and my husband shouldn’t eat cashews I make it with a macadamia nut cream.
The 4 recipes I’ve used most from Life Changing Food are Apple Cinnamon Nut Porridge, Grain-free Granola, Basic Grain-free Dough and Macadamia & Currant Shortbread. They all contain nuts.
I’ve made a few nut based dips including French Onion Dip & Spinach & Cashew Cream Dip both using a cashew cream base.
On the Saturday night before Easter Sunday we’ve often made these Resurrection cookies which starts by placing pecans in a Ziploc bag & beating them with a wooden spoon.
Last Christmas I made this yummy Vegan Freezer Fudge with Macadamia Nuts. I used macadamia nut butter instead of cashew butter as my husband shouldn’t eat cashews.
This Chocolate Hazelnut torte of course contains hazelnuts.
