Gluten and Dairy Free Cupcakes

Apparently the 18th of October is Chocolate Cupcake Day.

When I first started cooking gluten free I found that chocolate or cocoa helped hide the gluten free taste.  Hence I made a lot of chocolate slice and chocolate brownies.

I also found that it was very easy to sub your milk of choice (eg., almond, rice or coconut milks) for milk in cake recipes.  Often you can substitute gluten free flour for normal flour in a chocolate cake recipe and have reasonable results.  Grain free can be helpful to avoid the hidden sulphites in some gluten free flours such as corn flour.  I’d also suggest using organic tapioca flour to avoid hidden sulphites as well.

Many cake recipes can be cooked as cupcakes, just reduce the cooking time to about 15-20mins.

So if you want to celebrate Chocolate Cupcake Day here are a few gluten and diary free recipes that I’ve found work well:

GF, DF, Egg Free Chocolate Cake

This is a great recipe if you need a cake that’s egg free.  It could easily be made into cupcakes.

“Magic Bean” Chocolate Cake

We’ve used this recipe lots for birthdays.  It makes a lovely moist cake and no one would know that it has kidney beans instead of any flour!  The recipe suggests if you make it in muffin tins to cook them for about 20 minutes.

Coconut Cupcakes come chocolate cupcakes

I turned this coconut cupcake recipe into a chocolate coconut recipe by adding a couple of tablespoons of cacao powder to the recipe.  I also used  brown rice flour and tapioca flour in place of the buckwheat flour.  I used this recipe when I made GF Reindeer Cupcakes the Christmas before last.

Gluten Free Baked Mini Chocolate Doughnut Cakes with Dark Chocolate Ganache

I made these as cupcakes as I didn’t have a doughnut pan at the time.  (I’ll have to try these again now that I do have a silicon doughnut pan.)  I substituted almond/sunflower milk for the milk and coconut yoghurt for the Greek yoghurt.  From memory, I cooked them for 10-15 minutes.

Chocolate Coconut Cupcakes

These are gluten and dairy free but also have an option to make them grain free.  They are naturally sweetened with your choice of rice syrup, coconut syrup or maple syrup.  I would make them with maple syrup.

Another grain free recipe which contains no milk of any sort.

As you can see we do like using chocolate/cocoa in our gluten free baking.
