French Onion Dip

One of the things that my son really misses as he can’t have dairy is things like creamy dips.  I have experimented with a few things but this is my current dairy free version of French Onion dip.

I make ups some cashew cream by soaking some cashews in water – usually about 150g cashews with 150g water.  Let this soak for a few hours.  Then process the nuts and water until smooth, add about half a packet of French Onion Soup mix.  Chill and serve with crackers or carrot.  This gets wolfed down by my children.

I have also attempted a variation of this French Onion Dip from Quirky Cooking as it would be healthier but will have to work on it as my son didn’t like it.  I think I might try using the caramelized onions with the cashew cream.
