We’ve got a lot of pumpkin at the moment. I bought a whole butternut pumpkin and them my mum gave me a home grown pumpkin. So I’ve been wondering what do with all of this pumpkin? Particularly, as I’m the only one who would willingly choose to eat pumpkin in our house.
Pumpkin is my favourite vegetable so I will roast some of it and then have it with dinner or in a salad for lunch. The other night I did make a mince and rice dish with pumpkin in it. The recipe uses pumpkin but I often use sweet potato instead. What different recipes can I make with pumpkin?
I had seen a bread recipe with pumpkin on Quirky Cooking recently, so thought I’d search and see what other pumpkin recipes I could find.
Pumpkin Recipes
All of the recipes are gluten free or can easily be adapted. Many are also dairy free.

- Grain Free Bread Formula – This recipe can be varied to make all sorts of breads, muffins & fritters. I’m going to try this with pumpkin.
- Sweet Spiced Pumpkin Loaf – contains spelt flour but options to make it gluten free
- Apple, Pumpkin and Oat Muffins – contains oats & spelt flour but gluten free suggestions

Soups
With pumpkin being my favourite vegetable, pumpkin soup is one of my favourite types of soup. However, I don’t have many pumpkin soup recipes as I’d be the only one who’d eat it in my house. Though I’m going to have to make some and freeze it into individual serves.

- Pumpkin Meat Balls – These may hide the pumpkin better than the mince and rice dish I made.
- Butternut Squash Fritters

- Pumpkin Brownie Pudding with Peanut Butter Sauce – This could be a good dessert to hide pumpkin in.
- Pumpkin & Nutmeg Pudding Slice
- Pumpkin Pie – GF. Can’t have pumpkin recipes without having pumpkin pie, although it’s not normally a thing we have in Australia.
- Twisted Pumpkin Pie
- Cinnamon Pumpkin Slice
