Are you looking for a quick and easy gluten free alternative for lunch? Recently I turned a sweet gluten free microwave mug muffin into a savoury Gluten Free Ham and Cheese Mug Muffin.
Lately I’ve been making a lot of this microwave gluten free bread for one. I put half of the mixture in each side of a tupperware sandwich container to cook it in the microwave. After it’s cooked I add toppings and then toast it in the toasted sandwich maker. This is a great alternative for a gluten free toasted sandwich.
Frequently, I’ve been making this gluten free microwave muffin for breakfast. I often serve it with chopped up banana, coconut yoghurt and pure maple syrup.
So one day I thought that I could turn the micrwave muffin into a savoury muffin by adding ham and cheese. My recipe is below:
Gluten Free Ham & Cheese Mug Muffin
Ingredients
- 1 tbsp coconut flour
- 1 tbsp tapioca flour
- 1 tbsp quinoa flakes
- pinch of xanthan gum optional
- 1/2 tsp baking powder
- 1 egg
- 1 tbsp oil
- 1 slice choppped GF ham
- 1 tbsp grated cheese or dairy free cheese
Instructions
- Place the coconut flour, tapioca flour, quinoa flakes, xanthan gum, baking powder, egg & oil into a mug. Mix well.
- Add the ham and cheese and mix it in.
- Microwave on high for 1 min 30 secs.
- Run a knife around the edge of the mug to get the muffin out and place onto a plate.
- Enjoy!
It isn’t necessary to grease the mug because of the oil in the muffin. You could also add other savoury ingredients in step 2.
