Gluten Free Ham & Cheese Mug Muffin

Ingredients

  • 1 tbsp coconut flour
  • 1 tbsp tapioca flour
  • 1 tbsp quinoa flakes
  • pinch of xanthan gum optional
  • 1/2 tsp baking powder
  • 1 egg
  • 1 tbsp oil
  • 1 slice choppped GF ham
  • 1 tbsp grated cheese or dairy free cheese

Instructions

  • Place the coconut flour, tapioca flour, quinoa flakes, xanthan gum, baking powder, egg & oil into a mug.  Mix well.
  • Add the ham and cheese and mix it in.
  • Microwave on high for 1 min 30 secs.
  • Run a knife around the edge of the mug to get the muffin out and place onto a plate.
  • Enjoy!
