Gluten Free Ham & Cheese Mug Muffin

Ingredients

coconut flour

tbsp
tapioca flour
1
tbsp
quinoa flakes
pinch
of xanthan gum
optional
1/2
tsp
baking powder
1
egg
1
tbsp
oil
1
slice
choppped GF ham
1
tbsp
grated cheese or dairy free cheese
Instructions
Place the coconut flour, tapioca flour, quinoa flakes, xanthan gum, baking powder, egg & oil into a mug. Mix well.
Add the ham and cheese and mix it in.
Microwave on high for 1 min 30 secs.
Run a knife around the edge of the mug to get the muffin out and place onto a plate.
