Baking without an oven!

Six weeks ago today we packed up our kitchen to prepare for renovations. The renovations are nearly done. Although I’ve got a pretty good temporary kitchen set up in our garage I’ve been without an oven & hotplates for nearly 6 weeks. I’ve been working out how to bake without an oven.

Breakfast, lunches & dinners have been okay as I’ve so many electrical appliances that between them all we’ve been fine. Instead of cooking on the stove I’ve mainly used my electric fry pan or my thermo-cooking appliance. I’ve even simmered potatoes in my microwave rice cooker to make the grain free dough from Life Changing Food. The air fryer has been very handy for baking vegetables and even a cake! I’ve made a couple of roasts in my slow cooker. On Shrove Tuesday we used the electric fry pan and the toasted sandwich maker to cook gluten & dairy free, as well as normal pancakes.

Although I spent an afternoon baking and filling the freezer before the old kitchen was removed, we ran out of snacks a few weeks ago. Since then I’ve either made non-bake stuff in my temporary kitchen or mixed up biscuits or slices that I’ve baked at our parents houses when we’ve gone for dinner.

Since we used up the last of the baking in the freezer I’ve made:

Chocolate Bliss Balls

Prep Time15 minutes
Servings: 12 balls

Ingredients

  • 1 cup nuts whatever you prefer or have on hand
  • 3 dates
  • 40 g dark chocolate
  • 1 tbsp chia seeds
  • 1 tbsp cocoa powder
  • 2 tbsp cocoa butter
  • ½ cup quinoa flakes

Instructions

  • Chop nuts and dates on high speed in thermo machine or food processor for about 30 seconds.
  • Add remaining ingredients and mix in thermo machine or food processor until combined and mixture comes together, about 30 seconds medium speed.
  • Shape into balls and store in the fridge.

Notes

Alternatively spread into a slice tin and cut into squares, after refrigerating
Or put in glad wrap and roll into a log, store in fridge.  Cut into thin slices for serving.
