Do you make recipes that are named after someone you know? Growing up we often had Chicken Dorothea & Sandra’s Best Lasagna; both named after women who had shared their recipes with my mother. My Mum also makes Merle’s Christmas Slice every Christmas.
I haven’t made Chicken Dorothea for years because of the ingredients, including some packet mix cream of chicken soup. My brother still makes this regularly for his family and his girls are growing up with Chicken Dorothea as well. My Creamy Tomato Chicken is probably about the closest we get to Chicken Dorothea now.
Sandra’s Best Lasagna was 1 of 2 meals that I would choose for a birthday dinner growing up. We don’t often have lasagna these days but my gluten, dairy & soy free Lasagna is based on Sandra’s Best Lasagna. (Just went to link to the recipe & realised that I haven’t posted the recipe, so will have to do this.)
Anyhow, one of our go to recipes now is Tric’s Mince, which is named after my friend Tricia. Our kids used to belong to a group in our church for 10-14 year olds & they used to go to each others houses & whoever was hosting would provide dinner. One night Tric served a nacho style mince dish with corn chips & cheese which my kids raved about. I asked Tric for the recipe & she sent through rough directions for what she probably did. The recipe we now call Tric’s mince is probably different to what Tricia did or does.
Below is our version of Tric’s Mince.
When I haven’t had chopped tomatoes or the stir through sauce I have put fresh, chopped tomatoes in instead. You can basically add whatever vegetables you like, my son now reckons I add too many vegetables but I do show him Tric’s original notes. In regards to vegetables these notes say “I threw in some corn kernals to make it “Nacho-y”. Often I will put mushrooms or peas, or hide carrot or eggplant”; to show him that the original did have vegetables.

Tric’s Mince
Ingredients
- 1 Tbsp Oil
- 500 g mince
- 1 onion
- 2 cloves garlic
- can of chopped tomatoes
- 1 jar Leggos Sundried Tomato & Roasted Garlic Stir Through Sauce
- Chopped vegies of choice eg a few mushrooms, half zuchinni, half capsicum, 1 or 2 carrots, corn (fresh or frozen)
Instructions
- Heat oil in pan. Chop Onion & garlic and cook for a couple of minutes before adding the mince. Stir while the mince browns.
- Add chopped vegetables of choice & the canned tomatoes
- Add the Stir Through Sauce & stir it through the dish.
- Allow dish to simmer while some of the liquid reduces.
- Serve with corn chips & grated cheese (optional)

I often make “Mary-Jo potatoes”, named after our friend Marie-Josée who gave us this easy and tasty recipe: chunks of potatoes drizzled with olive oil, sprinkled with salt, add one or two bay leaves, and simply baked in the oven. This recipe is even better at this time of year with new potatoes. I don’t make fries any more and don’t miss them.
