Potato Sausage Pie is a recipe from my mother-in-law. It’s in the Mothers’ & Others’ Recipe book that my mother compiled. Potato Sausage Pie is a mixture of mashed potato, sausages, milk, eggs and a few others things. The ingredients are all mixed together and cooked in a pie dish, in the oven.
It’s a great way to use up leftover sausages. I often serve it with carrots and peas but it could be served with a salad or eaten as is. When my son’s food intolerances were diagnosed and he couldn’t eat potato, I would often make a potato sausage pie and a sweet potato sausage pie. This would last us for a few meals then. You could also make mini pies in patty pans or mini patty pans for a party.
The recipe was also easy to adapt to gluten and dairy free. The original recipe has breadcrumbs and self-raising flour which have been substituted in this version. The milk and cheese can be subbed for dairy free alternatives.
Gluten Free Potato Sausage Pie
Ingredients
- 3 large potatoes (or sweet potatoes)
- 2 tbsp yellow maize flour or almond meal
- 2 tbsp oil
- 4 failsafe sausages (or sausage of choice)
- 1 onion (can also use spring onions)
- 2 rashers bacon
- ½ cup milk of choice
- 3 eggs
- ½ cup brown rice flour (or gluten free flour blend)
- 1 tsp baking powder
- 130 g can creamed corn
- ½ cup grated cheese or dairy free cheese
Instructions
- Preheat oven to 190°C
- Peel and cut potatoes. Boil until tender. Mash lightly.
- Grease an ovenproof pie dish. Sprinkle lightly with the yellow maize flour or almond meal.
- Heat 1 tbsp oil in pan. Add sausages and cook until well browned all over & cooked through. Cut into 2 cm pieces.
- Heat 1 tbsp oil in pan. Add onion and bacon, cook stirring until bacon is crisp. (Alternatively cook in microwave on high for approx 2 mins)
- Combine mashed potato, sausages, bacon & onion, milk, egg, brown rice flour, creamed corn and cheese in a large bowl and mix well.
- Pour mixture into prepared pie dish.
- Cook in oven for about 50 mins or until firm
