I found being able to bake, make comfort foods and have fantastic cakes for celebrations so tricky. Cakes wouldn’t rise, they were dense, they weren’t tasty and they looked terrible. Lasagna was one of the hardest meals for me to make when my son and husband were first diagnosed with food intolerances. One of them couldn’t have soy or potato and the other needed to be gluten free. Many, if not all gluten free lasagna noodles have soy flour or potato starch. We stopped having lasagna for a while until I worked out alternatives for the lasagna noodles. Slowly I learnt how to make these comfort foods to cater for different dietary needs.
