It’s mango season in Queensland at the moment. We had a mango tree which was given by husband’s grandfather as a seedling in a pineapple tin, to his parents when they got engaged. When they built the house we live in they planted the tree. It died after a bumper season a couple of years after we moved into the house. Another mango tree is growing near where the old one used to be, it will have grown from a dropped seed. It hasn’t produced any fruit yet but hopefully it will in the next couple of years.
Last year my husband made a coffee table and in the middle is some mango wood from the old mango tree. He’s also just made a photo frame with some more of the mango wood which we are going to give to his parents.
My husband doesn’t actually like mangoes and in fact mango came up as one of the foods that he is intolerant to. The only way he would have ingested any mango would have been in fruit juice. Fortunately the rest of us love mango so we enjoy eating them.
Anyhow, we were given quite a few mangoes. We’ve eaten a few but still had a lot to use and some were over ripe. I made Frozen Mango Weis Bars which used the flesh from about 10 mangoes. I enjoyed eating the flesh that was left on those seeds. The recipe I used was a Thermomix recipe but it is based on this recipe. The recipe is gluten free and if you use coconut cream it’s dairy free as well.
Weis is a local Toowoomba company that makes ice cream bars and other frozen products. We buy their sorbet as it’s dairy free. They produce a yummy mango weis bar, so this recipe is based on these bars. As a teenager & young adult I went to a number of camps at a campsite near Toowoomba & for the last lunch of the camp you would always get a Weis Bar for dessert.
Years ago when we had the bumper mango crop I made a lots of different mango recipes trying to use up all the mangoes we had. I just googled mango recipes and collated a whole lot. Here’s just a few of them:
- Mango & Apple Cashew Crumble – not gluten free but I would just sub the oats for quiona flakes and the flour for brown rice flour with a little bit of tapioca flour
- Cucumber Mango Salsa – I can’t find the recipe I used but this is similar. The one I made had used chilli powder, cumin & rice wine vinegar instead of cilantro and jalepeno pepper. This recipe is gluten and dairy free.
- Mango and Coconut Cupcakes – not gluten and dairy free. I would now probably use this coconut cupcake recipe which already has coconut, so would reduce the milk as suggested & add the mango. I’d make the icing with mango puree, icing sugar & a little water if needed.
- Mango, Passion & Pine Frappe – another gluten and dairy free recipe.
- Mango Butter – Like lemon butter but mango based. This recipe is gluten free and you could use any dairy free butter alternative to make it dairy free.
Another mango recipe that I make is Avocado Mango and Walnut Salad. You can easily add some cooked chicken and make it a complete meal. This recipe is gluten free. To make the dressing dairy free use coconut cream or dairy free milk alternative.
