What is flummery?
Flummery is a lovely, light, creamy dessert that I remember from my childhood. Another name for it is Jelly whip. The ingredients are whipped up to make a light, fluffy dessert. Most recipes contain dairy but it is easy to make a dairy free flummery.
What ingredients are in flummery?
I’m sure the recipe from my childhood had jelly and cream. However, many of the recipes I found online had a tin of evaporated milk, as did the one if the Mother’s & Others’ Recipe Book. I did find one or two that used cream or a tin of reduced fat cream.
Dairy Free Flummery Ingredients
So the recipe that I’m sharing today is based on these recipes but I’ll offer a dairy free alternative. I’m using coconut cream but I did see a recipe that used yoghurt, so you could use coconut yoghurt as another alternative. The recipe is naturally gluten free. To make it sulphite free I’d suggest using vegan jelly crystals as they will have carrageenan, locust bean gum or similar, instead of gelatine. Most, if not all gelatine, contain sulphites. Agar agar is another gelatine alternative that is sulphite free.
Flummery or Jelly Whip
Ingredients
- 1 pkt jelly crystals1 cup 25oml boiling water300ml cream or coconut cream (chilled)
- 250 ml boiling water
- 300 ml cream or coconut cream
Instructions
- Place jelly crystals into a bowl, add boiling water and stir to dissolve jelly crystals.
- Allow to cool but do not set ( approx 1 hr or 30 mins if using vegan jelly).
- Whip cream with cooled jelly until approximately doubled in size.
- Place into large serving dish or individual serving dishes.
- Set in refrigerator (2hrs or until firm).
