Many of the meals that I make are quick and easy and can be made in 30 – 40 minutes. Here’s 10 meals that I make when I want to make dinner quickly and there all gluten, dairy, soy & sulphite free:
- Quick Chilli Beef – This meal was on very high rotation when my children were younger. So much so that my children have no problem with the kidney beans in it and would prefer it over spaghetti bolognaise or lasagna.
- Tric’s Mince – Another quick meal that can be served with corn chips. If you can tolerate cheese you can spread it on corn chips, top with cheese and bake in a hot oven for 5-10 mins to melt the cheese. Yum!
- Rissoles – Adapted from the recipe my mother uses, to make it gluten free and safe for my family to eat.
- Fried Rice – I often make this to use up ham that’s getting a bit old or with leftover failsafe sausages or chicken. Nice with bacon in it as well. I’ll use whatever vegies that I have in the fridge.
- Creamy Tomato Chicken – This a favourite of my daughter’s. Unfortunately it’s really hard to source the gluten free crunchy noodles now.
- Porcupine Meat Balls – Prepare and then let it cook for 30 minutes while you do something else.
- Mum R’s Mince and Pasta – The first meal my husband made for me after we were married. I’ve adapted it to make it gluten and dairy free.
- Easy Roast Beef Frittata – Made with leftover roast meat but could use ham, chicken or other meat that you have on hand.
- Creamy Chicken Pasta – Originally developed to use left over chicken and ham after Christmas but can be made any time.
- Salsa Mince – Another nacho style mince made using a jar of salsa, so quick and easy. I have a jar of salsa in my pantry, so I think this will be going on my menu soon.
